This vegan apple cake is very light yet yummy. It’s very easy to make and it contains on-hand ingredients. If you have a few kitchen basics in the pantry, prepare your apron, preheat the oven and get ready to bake this delicious cake.


3 apples
150 grams brown sugar
30 grams oil
180 grams water
1 tablespoon apple cider vinegar
1 tbsp cinnamon
1 tsp ginger powder
vanilla extract
180 grams spelt flour
5 grams baking soda
5 grams baking powder
pinch of salt

Preheat the oven to 180° C. In a bowl combine the wet ingredients, vanilla extract and sugar. Then add the flour, baking soda, baking powder, cinnamon and ginger. Mix well using a spatula or wire whisker until there are no lumps in the batter. Peel the apples and slice them thinly. Add half of the apple to the batter and stir to combine. Grease a metal round pan. Sprinkle a tablespoon of sugar on the bottom. Place the other half of the apple slices equally so they cover the bottom of the pan. Then pour the batter on top of the apples. Bake for around half an hour or until a toothpick inserted in the center of the cake comes out clean. Remove from the oven and let cool inside the pan. Once cold, flip the cake onto a plate. Enjoy!
