1 cup active sourdough
½ cup water
½ cup sunflower oil
½ cup brown sugar
pinch of salt
3 cups of flour (you can use all-purpose flour, whole grain or a mix of both)


¾ cup brown sugar
cup sunflower oil
1 cup walnuts
3 tbsp cinnamon

Preheat oven to 180° C. In a bowl, mix the sourdough with the warm water and the sunflower oil. Add the sugar and salt and once mixed, incorporate the flour little by little and keep mixing the dough using a wooden spoon. Once the dough doesn’t stick to your fingers; throw it on a floured surface and knead for 10 minutes. Using a rolling pin roll the dough into a 2 cm thick rectangle. In a bowl, mix all the ingredients for the filling using a spatula. Spread the filling all over the dough and beginning at the longest side, roll up the dough and pinch the edges together to seal it.  Cut into 8 to 10 slices. Place the slices on an oiled baking tray or pan and cover with a clean cloth. Let it rise for 1 hour and then bake for 30 minutes or until golden brown.
